Korean Seaweed Rice Rolls (Mini Kimbap)

INGREDIENTS

  • Nori sheets, quartered
  • Cooked rice, cooled
  • Cucumber
  • Carrot
  • ‘Danmuji’ pickled daikon radish
  • Gaga’s Kimchi, chopped
  • Sesame oil
  • Toasted Sesame Seeds

 

METHOD
Wet your hands. Take a piece of nori and place it shiny side down. Use about 1 tbsp of rice and lightly spread onto the bottom half of the nori (it doesn’t have to cover it fully). Place a piece of cucumber, carrot, danmuji and a little kimchi onto the rice and roll it up! Repeat until you have a full plate then brush rolls with a light coat of sesame oil and sprinkle with sesame seeds! Enjoy!
